Laura Allais-Maré is the founder and current leader and full-time volunteer of the SLOW FOOD convivium in Dubai, a start up which has been fully funded by herself and her husband.A commitment to sharing knowledge and enabling people to become more responsible for the food they eat and where it comes from, Laura also initiated the Balcony and Urban Gardening group of the Middle East on Facebook which has grown to over 3600 members in less than 3 years. 

Slow Food Dubai and its member volunteers are now managing one of the first URBAN ROOFTOP GARDENS in the UAE, based on PERMACULTURE and FOOD FOREST/NATURAL FARMING principles.

Of Italian parentage, Laura was born and raised in South Africa. A career which started in Hospitality from a Hotel School in Torino, Italy, and working 18 years as chef and executive chef, Laura then followed her passion – growing food and teaching others to grow it as environmentally and ethically as possible.
